Unique flavour of Alphonso mangoes: Alphonso mango is known as the “King of mango” because of its delicious tropically fruity sweet taste and juicy saffron/golden coloured non-fibrous tender texture of its flesh. It has a significantly thinner more shiny skin. Fully ripened Alphonso mangoes also release an aromatic fruity fragrance in the air. These qualities have been attributed to a unique combination of geographical conditions which are only present in Western India, especially near coastlines of Maharashtra and Goa.
The most expensive and exclusive mango cultivar: As ground and weather profiles required to cultivate this fruit are scarce, Alphonso mangoes are produced in a very limited quantity each year. These mangoes are harvested only once every year in the months of April and May and most of the stock is sold and consumed locally within India. The rest is exported to countries like U.S.A, U.K, Australia with large populations of Indian diaspora. Exquisite taste and flavours, limited availability and local and overseas consumption has made Alphonso mangoes infamous for their high prices.
A brief history of Alphonso mangoes: The Alphonso mango was introduced to India in Goa by “Afonso De Albuquerque”, a Portuguese explorer and military strategist who led many Portuguese invasions into India in 15th century A.D. Over time, these Alphonso mango plantations spread from Goa to different places in Maharashtra as well as southern India along India’s western coast.

Alphonso mangoes from our orchard (origin: Sindhudurg) are sliced and inspected by hand to produce this limited edition, single-origin, export-grade mango pulp. Only immaculately ripe mangoes are chosen in the grading process. Mangoes which show even the slightest signs of weathering or spoilage are discarded immediately. Instructions for use: Using our mango puree is the most convenient way of enjoying the delicious flavours of this tropical fruit. Mango puree can be enjoyed as it is straight from the can or can be used in a wide range of easy recipes like mango milk-shakes/smoothies, ice-cream, yogurt, tropical cocktails, mousse, cakes, pastries, pies, muffins and even a few meat preparations.
Storage: Unopened cans of Alphonso mango puree can be safely stored at room temperature. There is no need to deep freeze our puree as it remains perfectly stable at ambient temperatures. Once the can is opened, it is recommended to store it in the refrigerator after transferring the contents into a glass or a plastic jar. Alphonso mango puree kept in such conditions can last for upto two weeks! Alphonso mango puree can also be frozen for storage up to six months.
Our Alphonso mango purees are produced from the finest Alphonso mango fruits harvested from plantations along the western coastline of Maharashtra, India. These unique mango plantations are situated around 20 kilometers away from the Arabian sea, on a mildly hilly terrain covering an area of 500 acres! This region has a distinctive ground profile which has hard laterite rock as its base foundation with plenty of red fertile soil on top to provide nutrition to our mango trees. It also experiences a lot of rainfall during the rainy season and extreme heat during summer. A combination of sea breezes, unique ground profile and characteristic weather conditions have resulted in a mango fruit which is superior in taste, aroma and texture to other mango cultivars of the world!
Attempts were made to replicate these growing conditions in other regions of the world but only with limited success. After harvest, only the highest quality mango fruits are carefully hand-picked by a dedicated team of mango connoisseurs and stored in an environment which is perfect for appropriate ripening of mangoes. Freshly harvested Alphonso mangoes are green in colour. It takes around eleven days for a harvested mango to be fully ripe. Once ripe, they are washed hygienically and graded further according to their weight.
These meticulously sorted Alphonso mangoes are then ready for processing in our de-skinning de-seeding, pulping & canning facilities to make canned mango puree.
Over 11 tonnes of Alphonso mangoes from our orchard (origin: Devgad) are sliced and inspected by hand to produce 5 tonnes of this limited edition, single-origin, export-grade mango pulp. Only immaculately ripe mangoes are chosen in the grading process. Mangoes which show even the slightest signs of weathering or spoilage are discarded immediately.
It is important to note that authentic Alphonso mangoes are only cultivated in the western regions of southern Maharashtra. While Alphonso mangoes are also grown in other regions of India, the flavour, aroma, colour and texture of these other fruits does not match strict parameters which Alphonso mangoes have to pass through to earn, deserve and carry the rich heritage they’ve earned over these years.
Mangoes are the national fruit of India. This legacy spans thousands of years and references to mangoes can be found in old religious books and spiritual writings. In Buddhism & Jainism, mango trees are often portrayed as ideal abodes for meditation. In Hinduism, a perfectly ripe mango is considered to be a symbolic offering of devotion to the various Gods and Goddesses of the Indian pantheon. The famous Indian emperor Akbar (1556-1605 AD) is said to have planted a mango orchard having 100,000 trees.
Dried mango skin and its seeds are also used in Ayurvedic medicines. Mango motifs and paisleys are widely used in different Indian embroidery styles and are commonly found in Kashmiri shawls, silk garments etc. In the southern part of India, mangoes are referred to as royal fruits.
The classical Sanskrit poet “Kālidāsa” (500 AD) often praised Indian mangoes in his works. With regards to contemporary history, Nobel laureate “Rabindranath Tagore” wrote poems about the various stages of the blossoming of mangoes!
Science behind the flavour: Different varieties of mangoes have distinct flavour profiles because of the presence of one or many organic compounds. Latin American & Caribbean cultivars are characterized by the dominance of δ-3-carene which exhibit a sweet pungent odour.
Indian mango cultivars have a very strong multi-dimensional deep sweet flavour profile thanks to the high concentration of monoterpenes such as “Myrcene” and “(Z)-ocimene” as well as the presence of “Lactones” and “Furanones”. Alphonso mangoes have been known to shown the highest concentrations of these compounds thus making Alphonso mangoes the most “flavourful & fragrant” mango cultivar in the world!

Alphonso mangoes are renowned for their delicate pulp and we want our customers to enjoy this experience for as long as possible. Once a can of mango puree is opened it has to be stored properly in order for the puree to maintain its flavour, texture and aroma. Here we will describe how to prolong the life of this delicate ingredient using appropriate storage methods.
For use within a week
Use a tight lid plastic or glass container to store the puree in the “chiller” section of your refrigerator. If your refrigerator does not have a specialized “chiller” section, keep the container closer to the back walls of the refrigerator.
Note: Do not “freeze” the puree unless you wish to use it in thawed form. There are certain limitations on using frozen and thawed puree, for more on this see the last section.
For upto two weeks
Use a tight lid container to store the puree in the “chiller” section of your refrigerator. If you happen to have a multi-section fridge, it’s best to store this container in a section which operates below 8 degrees Celcius but above freezing point.
Note: Do not “freeze” the puree unless you wish to use it in thawed form. There are certain limitations on using frozen and thawed puree, for more on this see the last section.
For upto a month
To store mango puree for longer periods without freezing, one should store it in a tight lid food grade plastic container and place it in an industrial low-humidity refrigerator at 2-4 degrees Celcius.
Note: Industrial refrigerators operating at this temperature range keep the puree fresh without freezing it completely. This method is used to keep opened caviar tins fresh for upto 4 weeks.
For upto six months
Once a can is opened, immediately transfer a part of its contents (or all of it) to a food grade plastic container with a tight lid. Place it in the freezer section and maintain a temperature of around -20 degrees Celcius. Whenever needed, you can thaw the puree to room temperature and use the same in your preparations.
The only downside to this method is that one cannot freeze and that the puree multiple times. This will spoil the delicate texture of the puree.
For those of our clients who prefer using 3100 g cans, due to the large volume of the contents, we suggest that the contents of the can be divided into 3 portions of ~1 kg each. First portion for immediate use, the second portion for use within a week and the third for long term storage.

These have similar applications to Alphonso mangoes as one can create delicious desserts like sorbets, cakes, macarons, cheesecakes, puddings but can also be generously used to create drinks as well.
Totapuri mango: Totapuri (also known as ‘Sandersha’ in the USA) is one of the main mango cultivars grown in India for the purpose of producing mango pulp. It’s also the most economical mango cultivar compared to expensive cultivars like ‘Alphonso’ and ‘Kesar’. It’s universally appealing flavour and affordability have made it the most popular mango cultivar in the industrial confectionery/beverage market. The flavour profile of a ripe Totapuri mango matches that of Thai mango cultivars like Nam Doc Mai – a balance of fruity flavours, aromas and sweetness combined with pleasing acidity.
Recommendations for chefs, mixologists and confectioners: In order to achieve the perfect taste, aroma, colour and consistency, we highly recommend using Totapuri mango puree in combination with Alphonso mango puree as a 60:40 or 50:50 mixture (Alphonso:Totapuri). This mixed puree can then be used for a wide range of culinary applications from gourmet desserts all the way to simple mango based drinks while maintaining low costs of inputs/ingredients.
